Wow, look at all these new followers I've gained in the past week and a half. You guys are all awesome people and I want to give a collective thanks to each and every one of you for following me, whatever your reasons for doing so! I know for a fact that most of you wouldn't even know I'm here if it wasn't for FelineFluff making that random blog post about me. Thanks for sharing a bit of your own spotlight with me you crazy cat lady. She's really just the greatest, and I'd recomend following her if you aren't already.
To those who know me in real life here (all two of you) this may come as a shock, but I had some free time at work! Such a rare thing for me, as I'm executive chef at the restaurant I work at. I know it sounds like bragging to use that title, but not many know what I do, and I busted my ass to get the position so I'm a little proud of it. Okay enough about that, onto the real reason I'm posting this, I want to start blogging any MLP themed foods I do here, as I doubt I'll ever do too many. I know it doesn't have much to do with fanfiction, but at least it's in theme with the community. Anyway on to the dessert!
The Apple Family Caramel Apple Crumble Cheesecake
So this is one of the many ideas I had for an Applejack and Apple Family themed dessert, as they are the easiest to theme food around. Making cheesecakes is one of my hobbies, I spent a lot of time developing my own recipe for it and I take a lot of pride with how they come out. So I just had to make an apple cheesecake with caramel soaked apple slices and a brown sugar spice crumble over the top. So here she is...
Not much to look at right here, I know and please ignore the scruffy cutting board I have it sitting on. I actually made two of them, and we are selling them as a special dessert at the restaurant right now. They're really rustic and not so pretty, but the taste is incredible. I really wish I had a way for all of you to sample it. Here is a cross section from the one we're currently cutting into.
I will say they take patience to cut... And yeah so far it's not the most impressive looking thing, but the Apple Family and Applejack herself is rustic so it kind of fits, and much like Applejack herself, it dresses up really nice.
Ignore the mint sprig, I know it doesn't fit the dish's plate up, but the restaurant owners insist on putting mint on most of the desserts and I can't convince them otherwise, and this one was just about to be sent off to a customer. The sauce I made using the extra left over caramel I soaked the apples for the cheesecake, and added sea salt, butter, cream, spices, and a shot of actual Applejack (the booze no the pony). So yeah, there you have it. I won't bore you with posting the recipe here, but it's not secret, and I'll PM it to anyone who wants it upon request. It's not an easy one though, so be prepared if you dare attempt it.
As a final note I just have to express my disbelief on how many people actually dislike cheesecake. I know not everyone enjoys it, but I was surprised at how many people I found actually hated the stuff after I started my cooking career. It's just beyond me to understand how people can actually dislike cheesecake... oh well more for me! So what did you all think?.

I would guess that the people who hate cheesecake have only eaten bad cheesecake and formed their opinion accordingly.
