So you figure that the common demonimator among stallions who were brainwashed is their preexisting sexual appetites? I find that rather dubious given our evidence; Mr. Cake had two foals, and even in your story, you note how Big Mac was sometime attracted to his slaves. For years my theory has been, mare or stallion, the brainwashing works best on ponies who submit or respect authority more. Think about it. Brainwashed ponies include:
Shining Armor and almost all the royal guard.
Twilight and Cadence (worship Celestia)
Celestia (respected her own authority)
Fluttershy
Pinkie Pie (the super-positive part of her)
Filthy Rich
Fancy Pants
Flour Dis Lee
Soarin
Don't Include:
Applejack
Rainbow Dash
Luna
Spitfire
Lightning Dust
Starlight
Sunset Shimmer
I admit my theory has holes; Big Mac and Mr. Cake were pretty passive ponies, and most of the immune ponies either weilded or respected some authority, but it's the best pattern I can make out, and makes some thematic sense; it's not will, it's how well you embrace influence from above.

You're making an assumption that just because I have a character say something, that it means that in my mind that it's true. There are a few other options when it comes to what a characters says compared to the reality of the world they live in. They could be finding a false positive, thinking they've cracked the code when they are far off and are only seeing a pattern that could line up, but isn't correct. Then there is "confirmation bias", wherein the character only sees the pattern because they want to believe there is something there, even if most evidence points to the contrary, just because one or two examples line up with what they feel SHOULD be true. Or, and this is the simplest option, the character could just be lying.
That aside, I do have my own theory of why the crystal heart only affected certain ponies (and I don't think Pinkie, Celestia, or Fleur were ever really affected), and I feel my theory is pretty sound.
