What are the requirements for making a non-canon story. Do I just say it's non-canon or do have to do something really ridiculous to make it non canon?

Like say make Make Celestia a chaos mage ridiculous. Or hell a story where the Mane-7 meet Accord who i'm pretty sure isn't a thing in the shimmerverse. Pretty much what can/can't I do for a non-canon story?
