Whenever I've read about naval combat or something like that I've noticed that when a warship engages in combat all turrets all aim at one target. Is it possible for a ship to fire at two separate targets at the same time?

And if a ship is carrying both HE and AP shells does all turrets have to use the same type of shells?

If the main turrets are on independent fire control, yes, but most commonly they are on a central director system which leads to turrets all firing on the same target.
