I'm partial to Sunset and the Rainbooms, but would love to see Adagio included as well.

I can see either lead going after either group, but in this particular case it's all about the more interesting story. I say that because the way you framed the question makes it feel like a story about the initial gathering of the harem. And in such a story, it's less about the smut and more about the relationships. The smut is the bonus stuff, the ketchup and relish on the hotdog of this relationship story. And if your meat and bun taste like burnt rubber or slimey goo, then all you've got is a bad hotdog; and no amount of bonus stuff can fix that.

So before you start writing, you need to determine the base-level facts of your story and set them in stone. Here's a few examples I thought up:

• Why is Sunset attracted to the Rainbooms? Why do the Rainbooms want to be with Sunset so badly that they would rather share her than not have her at all?
• Why is Sunset attracted to the Shadowbolts? What reason do the Shadowbolts have to be mutually attracted to Sunset?
• Why does Adagio want the Shadowbolts? Does she still have her necklace? If the necklace has yet to be destroyed, then how does she explain away the odd behavior of Crystal Prep's brightest students? If the necklace is destroyed, why would the Shadowbolts be mutually attracted to Adagio?
• Why does Adagio want the Rainbooms? Is she seeking revenge for her necklace being destroyed? How would she go about it? Is she seeking forgiveness and redemption? If so, how does the harem spring up from there?

Knowing what story you want to tell beforehand is crucial. You can make random smut for the sake of random smut, and that's just fine. It'll find its audience. But to really make a great story, you need more substance than that. And I think it'll reach a lot more people if there's a story there that you really want to tell.

Or hell, you could just make every version and post whichever one you like the best. Maybe post the others if the demand is there. That's always an option as well.

As far as a harem story goes I would go for one that featured Sunset in odd chapters and Adagio in evens. As for the setting questions DragonxFlutter raises, the first thing that occurs to me would be to play with the Anon-I-Miss setting,, have sunset leave Canterlot High before Anon-I-Miss is Identified. Emotionally fragile after her friends betrayal, Sunset returns, at least in part, to her old ways as a means of self defense and gathers info on everybody in crystal prep. Once she knows enough, She forces her way into the most popular group, the shadowbolts, and romance develops from there. As for Adagio, she and the rest of the Dazzlings could return to Canterlot High shortly after that. You could have it happen right after the CMC are caught, in which case the Rainbooms, feeling both guilty for how they treated Sunset and suspicious of the Dazzlings true intentions, spend a lot of time around them, watching them as they help them settle back into the school and things develop from there. On the other hand, you could have Anon-I-Miss just stop after Sunset leaves, their true identity undiscovered, and have the Rainbooms be motivated almost entirely by distrust, at least until they start to fall for Adagio, that option would make it possible for Adagio later finding out the truth about Anon-I-Miss and have her struggle with what to do with the information. In either case, if Rarity of Fluttershy was the first one to get into a relationship with Adagio, and if they fell for her hard enough, I could see them wanting to share the joys of a relationship with Adagio with the rest of their friends and offering to help Adagio seduce them.
Another possible story, though it's more of a polyamorous relationship story than a full harem, that I have really wanted to see done for quite some time is one where Sunset gets into a relationship with both Sci--Twi and Princess Twilight. I think working through the problems of a relationship where not everyone lives in the same reality and two of the members are basically the same person would make for an interesting story, I'd love to see how they explained it to their family and friends. one fun possibility would be to have the Dazzlings , rather than being sisters or something like that, also be in a three way relationship with each other and have Adagio end up helping to guide Sunset through the pitfalls of such a relationship and help her explain it to those around her.
