I've seen Episode 1 so Far...

It's not so much a remake, rather an actual sequel... taking place a year after the original show.

Much has already changed. 1) Phoebe isn't around this time, replaced by new student Jodi. 2) The Ms. Frizzle we know (Lily Tomlin reprising after so long) has acquired a PHD and so her younger sister takes over. What this means for Professor Frizzle as I will refer to her is uncertain, but her "magic motorcycle" has as much power as the bus and the TARDIS, so a lot can happen with every kid's dream teacher.

Everyone remains the same (the phrase, "according to my research" is still heard), even Arnold's chickenshit behavior. This first episode made him a bit meanspirited with the arrival of Neo Ms. Frizzle to the point that he planted her pet Biollante on the Galapagos. It took one private talk that almost killed him not to confess that action was done.

Yes, the animation is cheap looking, but I'm continuing to watch the series, but so far, it's kinda meh. But if you want to hear Lily Tomlin after so long, be my guest, I'm certain she'll now have a Princess Celestia role... before there even was a Princess Celestia.
