First, a personal favorite: "Sacrificial Princess and the King of Beasts" It's a wonderful fantasy romance, with some action when needed for the story. Every part of the plot grows the characters and expands the world they live in, and the history plays a central role in everything taking place. It's a very well-written tale, with no power creep, no over-powered characters who can only be beaten by a 15-episode training arc, and most importantly: NO FILLER EPISODES!! In fact, they have to summarize a number of the story arcs a bit to fit them into a 2-season runtime. And so far they've done a good job at trimming the excess while not losing the impact. And, you can then read the manga to get the WHOLE story of these little subplots. Sarafi and Leonhart have a romance that feels genuine, and it develops slowly as they come to care deeply for each other, and how they work to better their world after so many centuries of war and suffering, of which they themselves are a product.
Secondly: "Mashle" It's exactly this: Saitama Goes to Hogwarts. It's exactly that. And it's hilarious. Go watch it and laugh.
