Ooh, I like this. Let's see:

Pinkie Pie - A heft of desserts. She'd pick out multiple different cookies, multiple different muffins, whatever they've got there. Because she's Pinkie Pie.

Rainbow Dash - An espresso, maybe two. She sounds like somepony who would love caffeine.

Twilight - A latte. The experiment pony she is, she'd probably be interested in the blending of milk and espresso.

Rarity - A muffin. Don't know why; just what my mind goes to.

Fluttershy - A chocolate chip cookie. Simple sweetness for simple, sweet Fluttershy.

Applejack - A basic coffee. With her diet being heavily apple-oriented and her living a traditional farm life, AJ seems to like keeping things simple. Plus, the caffeine could help with her farm work.

The CMCs would all pick the same thing for the togetherness aspect; I'd say they'd pick the cookie with rainbow M&Ms, if it's there. The multitude of colors would have nice appeal to fillies and colts.

Spike - The same rainbow M&Ms cookie as the CMCs, as the candies could somewhat substitute gems, with their hard texture and multiple color mix.

This was fun to think about; great question from you! I feel like this could be made into a story.
