Cake!

Cake is good! Home made cake is better! Home made cake with cranberries is even betterer!
Recipe provided below for those adventurous enough to try it.
(Approximate conversions provided for our wayward cousins across the Pond...)


Cranberry Breakfast Coffee Cake

340g (3 cups) fresh cranberries
330g (1 3/4 cups) granulated sugar
260g (2 cups) all-purpose flour
22g (2 tsp) baking powder
4g (3/4 tsp) salt
115g (1 stick / 1/2 cup) butter
2 eggs
120 mL (1/2 cup) milk (do not use skim milk!)

- Preheat oven to 177 C (350 F).

- Generously grease a baking pan and set aside.
I use a 24x24x5 cm (9.5x9.5x2 in) steel cake pan for this.

- Put cranberries and 190g (1/2 cup) of sugar in a food processor and pulse until finely chopped. Transfer to a sieve and let drain.

- In a medium bowl, mix together flour, baking powder, and salt and set aside.

- In the bowl of an electric mixer, combine the butter abd the remaining sugar. Beat at medium-high speed about 3 minutes.

- Add the eggs one at a time, beating well after each addition.

- Reduce speed to low and add in the extract.

- Add the flour mixture and milk alternatly, beginning and ending with the flour mixture.

- Spread 1/3 of the batter evenly in the cake pan. Spoon half of the drained cranberries evenly over the batter, leaving a 1 cm (1/2 in) border along all sides.

- Top with another 1/3 of the batter and remaining cranberries.

- Cover with the remiaining batter.

- Bake 50 to 60 minutes or until a knife inserted in the centre comes out clean.


Celestia certainly enjoys it.
