Lets start with the basic idea behind most popular shows: A lowly human/service robot/unicorn must rise up and become the hero his/her world needs to stop a evil from destroying everything.
You can draw multiple parallels from the six two parters episodes of friendship is magic (the fights vs nightmare moon, discord, and queen Chrysalis) to the plot of chrono trigger, every single final fantasy game, skyrim and streets of rage.
The same reason friendship is magic appeals to men is the same reason the transformers and the original power rangers did when we were kids.
The storyline of good never backing down from evil no matter what the odds, is something that appeals to the us, especially in times like this. Those who follow evil can never truly triumph over those who side with good because the forces of good will never accept defeat and will always come out on top.
And that is in my opinion why mlp:fim appeals to men.
