Earlier today I read a fic Giggle at the Ghostly featuring Pinkie Pie's granny teaching her to protect herself against the dark. Reading it gave me two ideas I may pursue at a later time.
1. Granny Pie is a scholar/collector of various myths and legends. The fic has Granny Pie recognizing the significance of certain events long before anypony else does in-canon. And if you consider Granny Pie & Nana Pinkie the same pony (which I do) it also fits with "Too Many Pinkie Pies"
2. She could be a prospective Companion of Doctor Whooves. My own personal headcanon for that usually is set up so that, with a few exceptions*, companions recruited in present day Earth have some counterpart among the MLP cast. In this case, the idea would be her counterpart is Sixth Doctor companion from the "Big Finish" audio plays, Dr. Evelyn Smythe, a historian who pretty much invites herself on the TARDIS for a chance to see history firsthand.
I haven't listened to any of Evelyn's stories firsthand yet, but various little things from trope pages and such suggest a good match. She loves chocolate, and a Pinkie-like philosophy about life: "real life doesn't have a happily ever after — just good days and bad days. And that as long as one person cares, life is worth living." goes well with Pinkie's lyrics in the Smile Smile Smile song (It's true, some days are dark and lonely / and maybe you feel sad / but Pinkie will be there to show you that it isn't that bad".
The only possible contradictory side is that my Doctor Whooves headcanon places Pinkie Pie as the pony equivalent of Clara Oswald. So not sure how that kind of connection could work, or if it should even matter. Still, if I ever do a Sixth Doctor story, I've got a good idea for a companion to use, now.
*The three exceptions are Twilight Sparkle (counterpart for the Second Doctor's Zoe Herriot, recruited in the far future), Princess Celestia (counterpart for the Seventh Doctor's Ace, since Celestia's teenage days would be in the far, far past), and possibly Octavia (counterpart for the Second Doctor's Victoria, recruited in the past, but opting to leave the TARDIS and live in the present day)
