Pie!

Soarin Badge - wildtiel

Felt a bit peckish, so I decided to make my favourite pecan pie. You can never have too many pies
Recipe provided below for those adventurous enough to try it.
(Approximate conversions provided for our wayward cousins across the Pond...)


Pecan Pie

60 g (1/4 cup) butter (room temperature)
100 g (1/2 cup) granulated sugar
6 g (1 tbsp) all-purpose white flour
180 mL (3/4 cup) corn syrup (NOT the high-fructose slop!)
60 mL (1/4 cup) Kahlua
5 mL (1 tsp) vanilla extract
3 eggs
150 g (1 1/4 cup) chopped pecans

- Preheat oven to 190 C (375 F).

- Beat sugar and butter in a bowl until smooth.

- Beat in flour.

- Slowly add corn syrup, Kahlua, and vanilla and mix until well combined.

- Beat in eggs.

- Mix in pecans.

- Pour filling into a pie crust and cover with foil.

- Bake on lower rack in oven for 40 minutes.

- Remove foil and bake on lower rack for approximately 10 more minutes.
(Keep a close eye on it; you want the centre of the pie to set so it does not jiggle if lightly shaken, but not have the crust burned to a crisp.)


Soarin gives it four hooves up.
