I am in this collab group with a story called Lavender Heart.  It's about this guy who ends up as an anthropomorphic version of Princess Twilight Sparkle.  Her five best friends end up as the Mane 5.  There is also Trixie, Sunset Shimmer, and the CMC, as well as other anthros.

I have written for the part of Applejack and she could use her little sis, Apple Bloom and cousin Babs among others.
