Allows the writers to have a 30 minute Spike X Fluttershy episode. Spike would get amnesia while doing a task for Rarity and when he wakes up, he sees Flutteshy and falls in love. It would be similar to how he fell for Rarity when he first laid eyes on her and from there we can see how Spike would act around Fluttershy and how Fluttershy would take Spike's advances. In the end after Spike gets his memories back, there would be a hint or a tease that there could be some mutual feelings with Fluttershy in the end, but this will never be touched upon.

Besides that. I mean something like getting her favorite foods together or some other over the top romantic gesture that he would never pull with Rarity.
