Vegetarian challenge day 1 · 6:45am Nov 12th, 2020
I have a feeling this is going to be super easy. How hard can it be to not eat meat? So far, I haven't even thought about bacon.
When I told my mom about this challenge. She laughed and thought I was joking. When she found out I wasn't joking, she said the she's making a whole chicken roast for dinner and that if I was going to be a vegetarian for a month, I was gonna have to learn to make my own food.
So I'm going to probably be living off ramen now...
Anyway, for breakfast, I had an omelet, which was delicious. And for lunch, I'll just have a grilled cheese. Easy peasy.
Question. Are any of you guys vegetarian?
I'm not vegetarian, but I cook a lot of vegetarian dishes. Learn to make oatmeal or oatmeal cookies, that's quite filling, and for suppers or lunch, baked potatoes with cheese and roast broccoli. You can bake the potatoes and roast the veg while your mom isn't using the oven and microwave them later. Or, if your mom serves potatoes or rice, you can roast broccoli or cauliflower ahead of time and reheat, or rinse and heat up some beans, so you won't be hungry without the meat. Have fun!
Extra firm tofu or tempeh is always a good option, if it's available. But no, I am not vegetarian.
(Also, a lot of instant ramen do contain animal fats in the soup mix, which would mean it's not vegetarian.)
