I cooked some perfect enchiladas of my own recipe last week, with specific thanks to my dad! (We might have some competition here!) · 11:46pm Jul 15th, 2020

My dad once told me a better way of making enchiladas after I spoke to him at home. I noticed he doesn't use Old El Paso kits, nor does he (or the other thing) season the meat while they're cooking. When I asked him what he uses, he said he uses wraps from the shop. So I tried it and what do you know, I liked it. Not used to how floury and soft they are compared to the tortillas you get in the packs, but not bad.

Last time I made them, I did it in the same way you make the cheesy baked ones. If you can, I recommend you try it the way I do by using Mediterranean herb tortilla as your wrap and use any tomato-based sauce you like. Last time, I tried out bolognese sauce with red onion and garlic. Add that with some cheese melted slowly into the chicken with the diced mixed peppers and let it simmer, you've got a party in your mouth waiting to happen! :ajsmug:

So yeah, not used anything but red, green and yellow bellpeppers, but am tempted to use sweet peppers one day. I might try some white sauce to cover them once I'm able to but the necessary ingredients again. In terms of spices and herbs, I'm unsure of what floats your boat specifically, but I frequently use rosemary, thyme, oregano and turmeric, sometimes paprika for colour. Last week, I tried it with some white pepper and parsley. Got to say, it was pretty nice.

When you use the kits, you use half of the cooking sauce to go into the pan and pour over the chicken with whatever else you want to toss in there, saving the other half to pour on the rolled enchiladas once they are in the baking tray. After having it my way, I've taken note they aren't as soggy or as sauce-logged, making them crispy and with a stronger taste. I grated so much cheese over the top of mine and put it in the over once I had what I wanted, and when it came out, oh, my! Such nicely-melted goodness! Smelling the cheese is like when I made my secret recipe for cheese and tomato purée brevilles. And the taste with that crispiness on the edges of the wraps once they were cooked! Oh, my----! Just like hot cheese on well-done toast, that's how crunchy and delicious they were! They were probably the nicest enchiladas I've had for a very long time, so it was more than welcome. :pinkiehappy: I even saved two more for the day after. Yum-Yum. :rainbowwild:

I actually enjoy cooking more now that I've been introduced to this form of doing things. So, thank you, Daddeth. :heart: You've given me more reason to be fat. (Seriously, I might try them for breakfast with my nachos and salsa, go full-out Mexican with it. Side order of rattlesnake tequila.)

When I move back out again, against my will or not, I have to make these at home, the way they should be done from the start. I'll show Sir Dad how a real enchilada looks and tastes! I can already picture the reaction...although we both know he won't admit who's is better. (Cough, cough, me, cough. :derpytongue2:)

:rainbowlaugh: Yeah, that's how it goes with me. I was watching a YT channel where they frequently cook in their blogs and I was wishing I knew how to make that kind of stuff, but my cooking skills are very mediocre. :ajsleepy: All I want is some Italian-style chicken! Is that so much to ask? :raritycry:

KidBehindACamera. He's an American YT vlogger who cooks frequently in his videos. He used to go to culinary school and his dad was a cook. Sadly, his dad died a couple or so years ago from sorosis and cancer, and his dad had his own YT channel where he cooked while his son filmed him. After he died, they began making some of his recipes because they miss his cooking. Some of the stuff he made...omg, I want to try it so bad!

I warn you, Angry Grandpa was his dad's name. You've probably heard of him given how popular they are, but watching their cooking videos is so addictive!

His son, Michael (KidBehindACamera), cooks on his channel and there's another one with grandpa called Grandpa'sCorner where he cooks more. They cook in almost all of their videos, or Grandpa goes to different fast food chains and reviews their burgers and whatever else. It's hilarious!
