I am curious, just how many people would be interested in reading a story that had little to no interaction with any of the show cast, but instead focused on events regarding OC Ponies and characters in another part of the world? Would people even give the time of day to a story that lacked the Ponyville Crew or any of the other characters we know?
I'm asking because I'm working on such a story, slowly, but I'm not sure if I should bother trying to post it here or not, given it is a cast of entirely OC Characters for those the story focuses on.

I don't see why a such a story wouldn't work or attract readers. It's all about how the execution of the concept is done and the characteristics of the characters involved.
To be honest, people will read it, but not as many compared to a story with canon ponies. The above is also correct, it depends on the execution. If you want the best of both worlds, either have a steady stream of canon cameos or having one or two fanon characters as main characters. It requires sacrifice to the story gods, but it's worth it for both parties. Most people come here to read stories about ponies we already know and love, not OCs getting the spotlight.
