This is from my 1-year-old survival world. Bobert was a former zombie villager I cured early on in the world, and he trades 1 pumpkin for 1 emerald. I have an auto-pumpkin farm unseen on the right that fuels me with infinite pumpkins to milk infinite emeralds out of Bobert.
