Should also check out [ Appleseed ] by Masamune Shirow. (Same guy that did Ghost in the Shell, but watch the computer animated one that was released more recently than the early 90s version.)
Masamune is a master at animating tank / gun battles, cities, post WW3 cities. This was the anime that had me dive into anime in the 80s. The Manga is exceptional.
[My Dear Marie] A 3 part series that has a lonely scientist build the perfect robot of the girl he is infatuated with. Hilarity ensues when the robot and the gal meet face to face.
[Neon Genesis Evangelion] Nuff said, but beware of becoming mind screwed.
[Slayers] Lina Inverse is adorably sexy in this swords and battles anime, the supporting cast are perfectly funny. A must watch.
You already covered Gunsmith Cats which is excellent.
One more to suggest is [Grenadier] 'IF' you can look past the impossibly huge breasts of the females, this is actually a fun anime romp of seriously funny gunplay. Ryushanna is the gorgeous long haired blonde senshi (Gun expert) that travels about the lands to spread smiles out to everyone. Bad guys ensue, and hilarity and over the top gun battles blast thru your screen, topped with the most unorthadox way of reloading one's gun I have ever seen. Overall, one of my fav animes, and the opening theme is excellent.
(I really wish they drew the ladies with smaller chests, as there is just too much sometimes. But that's me. YMMV.)
[Bubble Gum Crisis] An excellent girls wearing armoured powersuits battling bad guys anime. First rate top notch action, only made better by the outstanding soundtrack.
As you can tell, I've watched anime a 'long' time....
