Here's a background pony that I think is very underappreciated: White Lightning.

She has been in every season, most notably doing a corkscrew manuever in the title song as Twilight and Spike step off the Twinkling Balloon, but she's had various other background cameos throughout the series.

I don't think I've ever read a story that had her in it...
