Also, I like my steaks done medium well.
Edit: it gives the meat time to be hot all the way through, and for the iron taste of the food colouring they inject into the meat for display purposes to get cooked away.

9185243 What kind of food coloring are you talking about? If it's red, that's just natural meat juices. Meat comes from animals, and the blood in animals, like humans, is red. If you were to butcher your own cow and make a steak, you'd see the same thing.

The blood drains out after maybe a day, leaving grey meat, and to make it look palletable, grocery stores inject it with food colouring.
That's why the fluid in the carton and plastic doesn't look like blood.

I've gotten meat from a butcher before. It's always red, and usually takes about half a week in the fridge before it starts to noticeably turn grey if you don't immediately freeze it, just like meat from the grocery store that's been removed from the vacuum sealed packaging.
Red meat is actually red because of a compound called Myoglobin, a high protein compound that helps carry oxygen out of blood and into the muscle cells. Myoglobin is deeply red pigmented naturally, and the solution that drains from red meat is a mixture of it, water, and the little remaining blood in the muscle tissue that wasn't drained during the butchering process.
