Your wish is my... Whatever the answer to a wish is.

The idea revolves around the entire "date with a muffin," being a coping mechanism. Derpy is incredibly sad because she sees many other mares her age with special somepony's of their own, but has nopony to call her own. Plus, with her character being heavily flanderized by the town (they believe her character is only one thing, in this case it's loving muffins, being clumsy, and overall acting childish) she sinks into a partial depression, believing herself incredibly unlikely to ever get a pony to date; and, eventually, mary. With this mindset, she creates a fantasy for herself, where she goes on a date with the thing she loves the most, and is "loved back by" the most, muffins.

There are many peices of evidence that fir this conclusion too:
-The logical conclusion that no one would genuinely date a literal muffin.
-The waitress seeing Derpy talking to herself, and giggling internally at her "antics"
-Derpy projecting her own real life frustration at not having a mate onto the mare that supposedly gave her a jealous look
-A crowd forming to watch Derpy, and having reactions perfectly suiting a corny romance novel (the big dramatic gasps), showing that it's unlikely that Derpy has actual romantic experience
-The park that was supposedly mostly empty, then suddenly having a crowd watching from afar
-A bird taking the muffin that the entire fantasy is based around, and the fantasy immediately collapsing (the fic ending almost immediately after the bird took the muffin) as the reality of her situation sets in
