And I learned this: when somepony offers to do you a favor, like making you a beautiful dress, you shouldn't be overly critical of something generously given to you. It's quite close to the original meaning, though I doubt they thought about it past "horse-related aphorism".
Looking at a horse's teeth lets you judge age and health, so checking that while it's still being given to you is like checking how much money is in a card before reading it or flipping a present over to check for the price tag before thanking someone.
