Like calling your all-girl group of friends "guys" upon greeting. When pointing out errors in stories, how the author decides to have them say "hello/hey/'sup etc...." is what I go with. Also, people in some part(s) of the world have an accent that makes them say "'ello" not "hello" so that's how they write it.
Pretty much, that's just how I write myself as if I were talking.
