I had to check on the gold thing because I remembered gold still being valuable in legends, (and did confirm that in legends it is still worth 10-15 credits per gram, so definitely less valuable there than on earth ($56.69 per gram as of today 10/24/21) but nothing to sneeze at either). As per canon while gold still has value it's mostly used in manufacturing. (Which doesn't necessarily mean it's not valuable but not as precious a commodity).

Here I come to a MLP fic questioning it about how much value it places on gold and even there having to shrug and admit not knowing whether or not Mando is wrong or not regarding the stuff...

My guess behind why gold is not as cheap as you imagined is that while having access to space has significantly increased the size of the supply of gold, when you have a galaxy with the number of inhabited worlds as Star Wars does there is still enough demand to keep it expensive, even if its to a lesser degree than here on Earth.
