We know from Fantastic Foals that Luna lights the stars, but that's just illusion, as magical interactions in the upper atmosphere prevent the starlight directly reaching the ponies, and a similar thing can theoretically be done for sunlight.
If course, if Celestia's boasting here is completely honest, then it indicates a power level a few of orders of magnitude higher than I'd thought so it's possibly just that.
Still, being willing to go to such lengths to save someone is something I can get behind in a deity.
