Like, Dream, she's a total control freak who wants to make sure her slaves do everything by her commands and she will also use excessive brainwashing to wash away any kind of resistance. So just, hehe, a total control freak to the bone.
6878605 Well, I can only speak for the FiMC version of Twilight, naturally. But with that disclaimer out of the way - the first thing that she gets from mind control is the security she gets from knowing that her partners can't judge her. It really frees her to explore her desires, knowing the other ponies will love it regardless. That led her into discovering how thrilling complete control of others is, she is a control freak, it's true. She also gets a massive high from the sheer power of being able to toy with others and shape them into anything she wants, which she explores by sometimes making them do things against their nature, degrading, or depersonalising them. For all that, though, she doesn't like to see ponies that are upset, she'll always make them either blank, or happy about the situation they're in. She's also immensely paranoid of having that power turned back on her, thus all her precautions.
It doesn't feel like enough time or effort was put in for either brainwashing to really be successful. By that I mean that totally bending someone to your will seems like something that'd take more than a few hours to do. Yes, obviously Fluttershy wasn't really under Dream's control because she ended up turning it around on her, but the thing is Dream didn't seem to be at all surprised that Fluttershy was falling so quickly. I'm not saying she should've expected it to take years for Fluttershy to bend to her will, but just one afternoon? That just screams ineptitude, and how has an inept hypnotist gone so long without having anything backfire on her?
As for Fluttershy also brainwashing in just a short time, well... I don't know. I get the feeling that once the stare is ended its effects are too, so it wouldn't really help brainwash someone faster; it would just allow you to immediately skip past getting consent because you could stare them into consent and then when you stop with the stare they'd already have the compulsion to consent and it would wear them down much more quickly than doing it the normal way. So if that's the case then I still have the same problem with the rapid hypnosis of Dream, but if your cannon is that the stare is permanent or enhances the normal hypnosis then I guess that's ok...
I'm hardly an expert on hypnosis and psychology though, so feel free to correct me if I'm wrong.
6879606 You make a good point. I guess I can explain why it all happened so fast from a technical stand-point. You see, this is supposed to be a one-shot, so of course everything needs to happen fast if you want to get to the results. If this story had multiple chapters, then sure, we might have seen some more sessions where Fluttershy falls deeper and deeper into trance and Dream can slowly tweak Fluttershy to her desires. But, since this is a one-shot, there simply isn't enough space to have Dream do that, as the story is quite large already as it is. Same with Fluttershy's stare, really.

Well, we see in the episodes where she uses the Stare (on someone other than Discord) that it's near instantaneous. The only time where it didn't have immediate effects was in Bats! when Fluttershy essentially brainwashed herself into becoming a vampire (with Twilight's magic of course). Perhaps Fluttershy so quickly brainwashing Dream could be from both classic hypnosis and using the Stare at the same time.

You've proved yourself a decisive man so I don't expect you'll have any trouble deciding what to do. If you're interested, just step into the portal and I will take that as a yes. Otherwise, well, I can offer you a battle you have no chance of winning... rather an anticlimax after what you've just survived. Time to choose...
