The only reason she is kind and gentle in the show (besides the obvious) is that there is really no pony who has enough power to become a threat to Princess Celestia, not even Luna. However, since in the story Applejack had the support of all of Ponyville and most of Equestria, Celestia's power was threatened, hence calling for war. You should be more worried about Applejack.
I will let you understand what So-Be-It You-NIE-one references, but NIE was short for one Polish anticommunist party during World War II.
