I'm still processing what I just read. Ask me later in about... 5 years, when my confusion is over.
With about 4 million mares out there, every colt and stallion is a prize in need of state protection.
In fact, if the human does this, he should be some sort of holy saint or something like a savior figure. I mean he needs to sleep at some time... And if all his time is spend either on eating, sleeping or intercourse and if all is needed for impregnation is him climaxing in her, magic should do the trick. Cadance should work together with Twilight to make him cum on command to milk him efficiently, turning him into a one hump chump.
If ejaculation inside her results in guaranteed impregnation, the ponies are fine and could repopulate within years instead of decades.

Although i noticed in most of your stories, the room and everything grows alongside the ponies, so technically it has the same effect, as if the human had shrunken instead.
Also there is always some convenient magic, that protects the humans, so they cant really feel their true strength and beauty.
It would be really cool, to see a story, where there are some consequences to the ponies being giant, like actual destruction.
For example a prequel to your story about the solar system sized robo twilight, and her discovering earth for the first time, not knowing, that something as adorable, and fragile as humans could exist on those tiny pebbles called planets. And since the ponies dont know, they have no form of protection for them, causing natural desasters with their very presens.

As for the shrinking thing, how about a story, with a setting similiar to "booming rainbows", but the anthro ponies cant change their size, and they dont want to have sex with the human (best if they are entirely oblivious to the concept of sex, and are nudists). The human HAS a protection against being hurt, but everytime it negates damage, he shrinks. Getting stepped on, cuts his size in half, being exposed to the vibrations of a pony running by, slowly withers away the inches. Too bad, that that ability reacts to every type of pain. Having a painfully long erection, makes him shrink, as does getting sore from jacking off too much.

I'm pretty sure if they were giant versions of them, their compassion and kindness would actually increase, and would take great care to look after small little life forms. I'm pretty sure giant Fluttershy would get pretty mad if someony destroyed a planet teaming with life.

For a prequel to the giant robo twilight story, twilight could accidently cause the almost apocalypse, then galaxy sized celestia shows up, and takes care of humanity, cause twilight is still too inexperienced.
But Twilight wants to prove, that she can take care of humans too, so celestia leaves her one human.
Twilight has however no experience. Celestia tells her about humans needing oxygen and them being easily crushed by extreme gravity, but the rest she has to find out for herself.
However, she doesnt have nanobots yet, like in the sequel, to make him a cabin, so she tries to make him a new planet, since floating around in an airfilled forcefield wont do. However, you cant just use any rock. It has to have the right size, and distance to a sun. That part is easy for a solarsystem sized pony to manufacture from spacedust, just cool the ball of lava down a little.
However humans cant survive on a lifeless rock without water. Luckily some asteroid belts have ice among them. just drop a few on the planet and warm it up a little. Thats when she learns that too much water isnt good for humans either, because drowning. Etc, etc

For the shrinking human story, How about this:
a 6 ft human (gets down with damage, but he regains height by eating and resting) in a 10-15 ft anthro nudist big busted all female pony world, with no nether regions.
The ponies constantly mistake him for a foal (and a she since they dont know what a "male" is), which upsets him just as much, as being stranded in an alternate world. He is too weak, to survive on his own, but if the ponies try to take care of him, they either accidently crush him, blow out his eardrums with their loud voices etc, and constantly blueball him, cause they also have never heard of concepts like "sexyness" and stuff. They also dont understand why he needs to be "alone" sometimes, and get worried, when they hear him make strange noises (they also have great hearing).
When they finally start to understand, that certain parts of their bodies make him unconfortable for some reason, they try their best, to adapt. But they never invented underwear, so they have to improvise!
"Look, i covered my thingies like you told me too. I even made them smaller by binding them down, so they wont make you as unconfortable anymore"
