Because making it Carrot means that people get confused over who the Cake children are?
More logically, because for reasons not clear to me, Pound and Pumpkin are referred to often enough by just their first names but Cup Cake and Carrot Cake are nearly always referred to by their full names.

Keep it as Carrot if you like (I think it is funnier as Carrot, if a little bizarre), but in that same sentence you should change "of" to "off".
