Canon Mane Six Pairs as of "The Last Problem" · 7:43am Mar 20th, 2020
In the finale you have the following Mane Six pairs:
(1) Applejack x Rainbow Dash: Not made explicit for obvious reasons, but they're clearly living together, and bickering like an old married couple. The interesting thing is that the more-femme AJ is more likely to be full-on lesbian and the more-butch Dashie bisexual, given that AJ's never had a crush on any male character but Dashie once had a crush on Soarin'.
(2) Fluttershy x Discord: A bit more explicit, in that they are very friendly and seem to be sharing quarters in his dimension. This has been teased a lot.
(3) Pinkie Pie x Cheese Sandwich: As Pinkie's actually more traditional than Applejack, being essentially a (very silly) Pony Amish girl, it's not surprising that she married him and have at least one child together.
Unresolved are the fates of:
(4) Rarity x Spike: They don't seem to treat each other as anything but friends when reunited after absence. In fact, they mostly ignore each other. Given that Spike is now a very high-status adult Prince or close to it (brother of a Princess and brother-in-law of another Princess), this has many possible interpretations. Well, she did more or less give up her claim to him in "Dragon Dropped" ... but that was long ago now.
(5) Princess Twilight Sparkle: Not apparently paired with anyone. At least not with anyone we meet.
There are also a number of minor background couples, but I'd really need to go over "The Last Problem" with a fine-toothed comb.

This sincerely feels like an insult from the writers. While AJ showed to be married to her responsibilities as a farmer. And there have been bits and pieces implying RD was straight. But above and beyond... IT WAS DOING WHAT WAS INSULTING FROM THE BEGINNING! Having a character's sexuality be identified because of their HAIR COLOR!!!!!!!!!!!
This is another reason I consider MLP FIM in the last third of its season dead to me.

Rarity: Gold digger who realizes too late what she took for granted
Twilight: Romance? who's got time for that? I've got books to read, and lists to write about what books to read, and schedules to write about when to make my book lists.

Show did not clearly establish in the episodes that either Applejack or Rainbow Dash were bisexual, let alone lesbian. That's my main problem with the Appledash pairing shown in the last episode.
Dashie has displayed romantic attraction toward at least one stallion (Soarin') and ambiguously toward one mare (Fluttershy) before this point. This implies bisexual. She is a very close friend of Applejack's, so the pairing seems possible.
Applejack was never shown as being attracted toward anyone during the show before the last episode. She did reject the advances of one stallion (Trenderhoof, and can you blame her?) and acted particularly sweet toward two mares (Twilight Sparkle and Rarity) at various times (which might just be friendship). Rainbow Dash was probably her best friend in the world, so I can see if she was going to be attracted toward any mare being attracted to that one.
I'm kind of annoyed that they never resolved Sparity one way or another.

When did Rianbow Dash ever shown to be attracted to Fluttershy?
I can understand AppleJack as lesbian, she never seem to be interested in any handsome stallion (not just Trenderhoof in the show, but also Good King Sombra or handsome cowboys in IDW comics) but also seem to be close friends with mares (not just Dash but her closest friends are also Rarity and Coloratura). I was always joking that she's probably gay ever since "Simple Ways" aired, but after season after season of AJ being only having good interactions with her brother and Spike as the only male characters in the show was always visible. She never really reformed or forgive Flim&Flam and she also never build up any bond with Discord.
With Dash, i would also believe that she's bisexual or straight since she didn't as much had any meaningfull inteactions with any mares beside Aj and Scootaloo. Her other closer friendships include Wonderbolts (Soarin in comics) and Quibble Pants (her third most popular ship until he got a girl in S9). And true she wasn't interested in Zephyr Breeze, but she's also not completely sick of him at least in Equestria Girls uninverse. In it she's the kind who actually give s him a chance at least until he embarass himself and then she ignores him.

Honestly, I don’t think AppleDash and FlutterCord are canon at all. Hardly anything within the episode seemed to imply them as such.
