I think her grandfather was a pegasus, actually. I searched and searched for ponies that might be related to Pinkie, and I eventually found this.

It is a pegasus Pinkie Pie. Your theory is really cool. I always thought her Granny Pie was probably a pegasus and that's why she hopped around so much. I like to imagine she spent a lot of time with her Granny and she got used to hopping around with her when she would come to visit.
