Sisterhooves Social is it for me.

Also my favorite Applejack episode... even though it isn't an Applejack episode.

For me, it would have to be either Look Before You Sleep or Sisterhooves Social

Simple ways for me, Applejack was just great in that episode, i love this line

Rarity: "How do you know what I like?"

AppleJack: "Because i know you"

And Applejack really knows Rarity very well, she knew how the push Rarity button and snap her out of her crazyness. and that was beautiful for me.
