So as I'm sure you all know, I really only write humanized stories. (well, except for Big Mac's Rainbow Party, but that's more the exception than the rule) And a long dang time ago, I saw someone ask what race you imagined the Mane Six being as humans.
At the time, I didn't give much thought to it, but recently I came to a startling realization after re-reading my past stories: all of my characters are white (if race is mentioned at all). Now, I'm a white guy, so maybe I'm just writing in something of a "comfort zone" when it comes to race. It's like how men find it hard to write women well, or straight people can't write gay characters. Seeing as how I'm queer as a $3.50 bill, I don't have that problem, myself.
But I began to think that maybe I should add a bit more diversity, seeing as how the world isn't 100% white. So I did some brainstorming, and I came to a decision on how I like to imagine the Mane 6. So without further ado: here's my breakdown of human pony race/body headcannon!
Twilight Sparkle:
This one's easy. I really can't think of Twilight as anything other than the stereotypical nerdy Asian girl. Body-wise, I would say she's average. She tries to eat healthy food (because she's researched high fructose corn syrup and things like that), but as someone who doesn't exercise often, she's not very athletically built. I would say her breast size is about the third largest (behind Pinkie and Flutters).
I also imagine her as being quite short, possibly the sortest depending on how I feel about Dash's height.
Rainbow Dash:
I used to think of Dash as simply being "really tan," and I kind of like that. Recently though, I stumbled across a human Dash and Pinkie Tumblr, where Dash is dark-skinned and described as being half Brazilian. And That stuck in my head, so I'm stealing that.
Body-wise, she's pretty athletic. Cut arms and legs, six pack abs, the whole deal. I've recently started to think of her as being pretty tall, placing just behind Rarity in height.
And breast size, I'm sticking with "pretty much flat."
Pinkie Pie:
Nothing about how I think of Pinkie's changed. She's still white, still rocking the sexy curves, and still pretty big-titted.

Applejack:
Again, not much has changed. I would say she's about the same height as Dash, maybe one or two inches either way.
Farmer tan, strong back, average bust size, freckles all over.
Rarity:
Tough nut to crack here. I've seen a whole bunch of art depicting her as being black, but I'm not so sure it suits her. I think it looks odd with her deep purple hair, I dunno.
All the same, I imagine her as being tall, build like a supermodel, and copper skinned. She's right behind Twilight in bust size, but she's very proud of her toned waist and firm ass. Basically, she looks like a damn model.
Fluttershy:
Okay, I'm cutting against the grain here, but I imagine her being a four-armed Indian woman.
Kidding. She's a shy white girl with a body comparable to Twilight's and a breast size that falls between Twi's and Pinkie's.
So my depiction of her isn't very creative, sue me. I don't think she's a very interesting character.
Phew. Alright then. Dunno why I suddenly felt so compelled to write this all down, but there you go. Enjoy those ramblings.
I see a lot of people saying that Twilight is black, and there is reasoning behind it, but I just see her being pretty much your description only she be white. I mean Luna pale kinda white. Books don't need sun, why does she?

Glad I know how to keep at least one of my fans satisfied: put stuff in Rainbow's pooper.
I don't, really, because they exist in a place where "race" means something completely different.
Having said that, though -- I have noticed something terrifying.
Each of the six represent major stereotypes about specific races.
Let's work through in turn.
We have unicorns: One is studious beyond reason, beyond her own well-being at times, etc. etc. The other makes clothing.
These are stereotypes about Asians.
We have pegasi: One is lazy but athletic, and the other is in tune with nature and super sweet and nice.
These are stereotypes about African-Americans. (The latter one is part of the "magical negro" stereotype, that some African-Americans are willing to act helpful for the nice oppressors, etc. etc.)
Finally, we have earth ponies: One is hardworking to the point of self-sacrifice, family-oriented, and speaks with a southern accent. The other one is all about excess and eats constantly.
These are stereotypes about Caucasians, particularly Caucasian-Americans.
Now, just to say it: I don't think any of this is intentional, but it is interesting and strange. Maybe I'm imagining it, but, eh, I can't help but notice it sometimes.
