I just find it easier to write characters as if they where bipeds rather than quadrupeds. I don't have to remember about them not having hands and stuff.

Interesting to say the least. I would recommend starting from the beginning and moving on from there. With the world building and character building you have done already I could see a great longer story coming to fruition.
