How does the UNSC deal with war criminals? I'm assuming that during the Human Covenant War, such crimes against the Covenant would be ignored seeing as the the Covenant committed numerous atrocities themselves, but how about now that the war is over, or when dealing with Insurrectionist's and and rogue colonies?

Against the Covenant, they were mostly likely over looked in some big degree, because No one, gives a Living shit about what a Human does to a covie. Sure, they Are Some crimes that Can NOT be ignored, because they were so big, Serious, or just plain out disgusting.

Now when it comes to Human war crimes against Humans? The UNSC's spooky side, called ONI, or the Office of Naval Intelligence, probably kidnaps the criminal or they kill said criminal in some way, or torture them.

The UNSC is no longer governing mankind in the majority, and is now just the Military Hammer of the U.E.G, which is back in power now. So its likely the UEG is going along with Due process and giving these prisoners trials, sentencing them to life or execution, and it goes on from there.

However, after the storm has ceased, I can imagine that all unsavory behavior performed by any soldier would be punished with normal severity.

Well war crimes doesn't entirely consist of crimes against the enemy. So you'd need to be more specific.
