I would say that when would be one of my personal favorites too. otherwise it's kind of hard to pick between them all. most of the ones from 6 are pretty up there for me along with the four fiends and Gilgamesh themes. I also like the final boss for 4 as well as the final aeon theme.
My chose of my favorite boss theme is
