My thoughts on the difference between a satyr or a centaur would be based on the kind of magic that is involved.

Satyrs would be born with the use of 'lesser' magic (lesser in compared to creating centaurs), one maybe a unicorn can learn to cast or magic in the air of Equestria that enchants the human to breed with ponies or something like that. Whichever works in ones story/head cannon.

Centaurs would happen with greater magic. The kind of magic enhancement that would make a human glow like a small sun from so much magical energy. Thus, it would help create a creature with 'more' properties and power of both it's parents.
