You said Celestia is one of the Strongest Creatures in this world. Wonder who else is that ranking also? I bet Torch is one of them.
Yes! Torch is another powerful creature in this world. I'd imagine he's the king of sorts for the Dragon people. (No different than the show. Though our story has none sentient dragons as well!) They likely have a volcanic, gem filled island and don't interact much with the outside world. They used to pillage the mainland I'm sure, but they tried to attack Celestia's land and...well... it didn't work out well for them. Anyway, Torch is likely one of the few creatures also a old as Celestia. Dragon's lives are very dangerous and cut throat, so they have to be very strong to make it to adulthood, let alone the over 1000 year old godzilla form that Torch has. Celestia sees Torch as a figure from her past. Torch sees Celestia as a respectable adversary. Outside of that they do not get along or interact.
How where humans able to capture Luna, why did they not attempt to kill her while she was sleeping and how did Celestia manage to get her sister back?
Final Stand captured Luna with traps and fought her to his last breath. Somehow though his corpse managed to finish her off with a sleeping spell he procured either from a traveling witch, or something else... He was fully gone when Stalking Silhouette showed up and she didn't know how the spell worked, so she didn't want to do something, break it and have Luna breathing down her neck suddenly. So she just covered the entryway with stone and sealed them both in. As she called it. 'A tomb for them both.' As for how Celestia got her back- SPOILERS!
In the show Grogar was said to be the Father of Monsters in your story did he create monsters and if so how and why and if not how where monsters created in your story?
I- kinda fell off the MLP bandwagon before the last season. I watched it, but its blurry in my memory. In fact I missed the last bit of EG movies and shorts. Anything after Camp Everfree I haven't paid much attention to. I know I watched the cruise ship movie but I don't even remember the name? Nothing happened, I just didn't tune in. So Grogar wasn't on my radar for lore. I could make him some kind of monster religion or historical figure. We'll see what happens!
Speaking of, though I haven't watched the last few shorts and movies, I did read the synopsis for them. Surprisingly the one with Wall Flower sorta lines up with a plot idea I had for this story for a long time. I decided to not watch so I could write my version. We'll also see how that goes!
How and why did Celestia and Luna become vampires in your story and what where they before humans or witches?
They weren't human, but I'm not 100% on what they were yet. They, however, didn't want to be turned into Vampires, I know that much. It was sorta thrust upon them, much to their displeasure. They made it work though!
In the first story given the undertone of Sunset reply of what Twilight's blood tasted like will they fall in love at some point or will they remain friends?
I love shipping Sci-Twilight with Sunset. However this story will not be shipping anyone right now. Hard enough to keep all these facts straight without romantic components as well! So not really in this story, but your welcome to squint, tilt your head a little and imagine its in there! Though seeing as how Sunset is Celestia adopted daughter, and Candace is Celestia's adopted niece and how Candace and Shining Armour are getting married, I could see that being messy? (If it helps Sunset and Candace do not view each other as sisters. They care about each other, but its just not a sibling relationship. Candace had moved out for about 100 years before Sunset was born or adopted. Its more like Candace would babysit here and there. Plus they got to know each other a lot better after Sunset stopped being a socially mean dingus.) Its a strange situation considering the world we're working with, which is another reason I likely won't write that here. In other stories however sure!
Is Scootaloo a harpy or some other monster? Idle curiosity there.
I've mention Scootaloo here and there in the story, she and Rainbow's parents know each other. Scoots sees Rainbow as a sister, even if they're not related, as they grew up together. Its not really a spoiler but I will tell you here. She's a Gargoyle. One who had an accident and can't fly anymore. It'll be explained more later.

In the show and in most stories Celestia and Luna defeating Discord was a key event in there history, did that event happen in your story and if so how did those events unfold and what happened afterwards, like who was the voice who spoke to Celestia after she lost Luna, in my mind I can see it has being Discord telepathy talking to Celestia when he was trapped in stone?
Sunset and Luna have a well developed relationship, when did Luna wake up before or after Sunset became a vampire and if she meet her before was there relationship different then compared to know?
Given that Sunset is the daughter of Celestia would that make her the heir/second in command of her clan in the event her mother or aunt where unavailable and how are vampire clans organised in layout and ranks?
Celestia has the ability to read minds and before said she has via a number of means gained many powers and abilities, what other unquie powers would Celestia, Luna or Sunset have? In my mind I can see Celestia having an immunity to Sunlight, Luna the ability to enter a home uninvited and Sunset the ability to return from a stake in the heart given there magical powers and characters in other stories.
Sunset has the ability to inject a relaxing vemon into a human, what other effects would vampire blood have apart from turning a human that she at her current power level cannot do? In my mind maybe the ability to hypnosis/enthrall humans into serving them, with maybe Sunset unwittingly mind controlling Twlight while trying to heal her and then need to breake it.

I quite enjoy my SciSet, and just having them be friendly and interact is probably enough for me to ship it here. But I must say that I am especially intrigued by a human Twilight dating a Vampire ex-human Sunset. Because the differences in perspective make for great contrast, but they’re both still experienced with being human, which is some great similarity. And the way their share experiences can be used as a basis for an understanding that maybe the other 5 lack is always a fun bit of character interaction.
Like nothing about that is shipping, I just want it to be.
As for lore: how common is it for vampires to turn humans? If these humans are living in monster communities for most/all of their life, how does the overt racism/specism tend to affect them? Did Sunset need to use the “do you know who my mom is?” Card to shut up particularly obnoxious people at school? What about random encounters with people like the gorgon who S-worded Twilight? Has Celestia or Luna ever had to go full vampire avenger on someone for that? Or is Twilight just super lucky?

I would like to see how Sunset was treated by monsters who where unaware of who her mother was when she was human (or maybe a witch given Rarity said Sunset is knows magic).
I would like to see Celestia and Luna, mainly Celestia as in the present time is in full "Caring Mother" mode return to full "Warrior Princess" as in this story Luna is at this point due to her long sleep still mostly like her old self, maybe someone not knowing who Sunset mother was kidnapped her because of her friendship or love with Twlight and Celestia would to get her daughter back would go full "John Wick CH 3 lone warrior against the world" and save her daughter only for in her rage have unwittingly hurt Twlight in some way and Celestia then needs help and gain Twlight's forgiveness or more likely herself for her actions, what do you think?
