I'm Danish, and I've never seen this before. But I could find out, of course. :twilightsmile:

On edit: damn, there are like a dozen variations and apparently a deep factional divide between at least three tribes of Danish baking enthusiasts on the topic of what is a) the original and b) the best recipe.

But if you want, I can definitely find out. This promises to be fun.

Fun factoid: it's called 'gåsebryst' (goose chest) because of this: before there were kitchen appliances, getting marzipan completely flat and even was difficult. It usually developed a surface structure reminiscent of a goose's chest.

That looks absolutely delicious. My arteries hurt just looking at it.

God, I haven't had Gåsebryst in years, I'm feeling a sudden urge to go raid the local baker and get way too many.

I see Celefin has already volunteered to go hunting for recipes (hello fellow dane), and they seem to be putting a lot of effort into it so I shan't step on toes there.

I will say that you have an experience in front of you, Gåsebryst manages to be even MORE delicious than it looks.

Please post a separate blog with the results, PP. I'm intrigued.

Not Danish, but this looks very similar to Swedish prinsesstårta (princess cake). The Danish Wikipedia article on gåsebryst makes it sound like it's practically the same thing.
