Pretty sure she knows that given in the comics, nature fascinated her as a specific wild animal tore up a vampiric jackalope or jackrabbit? too eat while the others were sick to their stomachs at the scene. From my gathering, it not that the animals are forced into a vegetarian diet as that goes against Fluttershy's role as a veterinarian which she takes seriously, but rather they're not allowed to eat each other's leather their own individual prey while IN the sanctuary which they can come and go from at will. Outside is fair game, inside is "Fish are friends not food sort of deal" time.

Rewatch and pay attention. She straight up says that the predators will have to eat an all vegetable diet while they have to stay there, and they obviously can't leave while in recovery which means they are stuck with whatever she feeds them.
Also she not only isn't the veterinarian of Ponyville, but I think the above issue is a pretty good indication of why she isn't.
And we STILL don't know what she does for money!

Probably an oversight on the writers part then given she should already know this given she's been handling carnivores for a long time now. Maybe fish has been used or something during that time?

We really need to stop excusing bad writing. These people have had nearly a full decade and they are still prone to fuck ups. This one made it through writing, editing, voice acting, and animation, in season 9. It isn't an "oversight".
