I was supposed to make calzones today, and it started off great. I had my dough and ingredients prepped, my cooking area secured, and I just generally felt excited to do it. I spread out my dough, ladle on my sauce and cheese, and I go to fold it over.
That's when things starting going poorly. See, I had forgotten to flour my work surface, which resulted in the dough sticking to the sheet pan I was working on. So now I had dough I couldn't peel off, which was covered in ingredients I didn't care to waste. So, I used some of that ingenuity of mine, and worked out a solution.
I scraped the dough/sauce/topping mixture, plopped it into a mini muffin tray, and threw it in the oven. Bam! Mini Pizza Bites! And, to my pleasant surprise, they were actually quite tasty! Let that be a lesson to you, guys: Even when it looks like you've fucked up beyond repair, give it a go anyway. You might just surprise yourself with how well it turns out.
