I've been thinking a bit about Applejack's Parents and I've come to the idea that Ma was from the Apple clan, meaning that Pa would have had to have been an Orange. I came to this decision because of the dress Big Mac wears in Brotherhooves Social.
The dress was made for a mare of about his size, and was a bit out of date fashion wise (not to mention the wig). The apple theme of the dress means it's not something he just gabbed from the bargain bin and somehow related to his family. The size of it makes it pretty clear that it wasn't Applejack's either.
That leaves two options, one is that Big Mac is a cross dresser and this is from his own collection, though the over done quality of the makeup makes me think he doesn't have much experience with it. The other option is that it belong to Ma Apple.
This would mean that Ma was a big mare, and as built up as Macintosh is. Between the size and the apple theme it makes sense that she was a member of the Apple family, so Pa must have been an Orange. I suspect that Applejack takes after him size wise, and maybe even color wise.
As for Granny Smith... I have no clue. I think her name is "Granny Smith" but she's not actually their Grandmother and is likely around 250-300 years old (she was there when Ponyville was founded, and according to Winter Wrap up, Ponyville has been around for centuries).

This has been proven pretty much completely wrong, but that's okay. The episode was awesome enough that I don't care that it killed my theory.
