Seven hours of spending 12,000 in gold to get Enchanting up to 75, then specifically going after soul gems and cheap enchant-able items, and another hour of standing at the enchanting altar, I did it.
So having never achieved this feat before, what did I do? As any newbie Enchanter with Skill 100, I got drunk on power, of course, and crafted gear that I honestly believe will serve me for the rest of the game.
I am beginning to become concerned that I may be burning out before the Special Edition comes out in a month. Because I'm not stupid; many of these modders are not going to return to update their mods for Skyrim SE. Many have claimed they simply cannot go back to vanilla.
How... enchanting.

I can believe that. God knows I'd never play vanilla Fallout 4 after experiencing mods, so an even older game like Skyrim would be even harder to go back to vanilla.
Looks like you still have vanilla rings, armor, and perks.
The armor mods are all up to your personal preference, but I'd recommend these two for overhauling the jewelry and perks.

4227593 I've got a left hand ring mod, because for some reason Bethesda believes Dovakiin wears only ONE ring on ONE hand. Ugh.
And I'm using Steam Workshop. Last time I used Nexus, had some problems with stability, and couldn't figure out which mod caused it. I'll revisit Nexus when the SE comes out.
4227869 The nice thing about Immersive Jewelry is that the left/right hand rings framework is already included with it.
CTDs tends to come from the effects of particular mods or mod conflicts, you can try to find culprits by deactivating and reactivating mods one at a time, but it's not feasible when you have 200+ mods installed. Best solution I've had is to take preventative measures by jumping in-game for a while each time you install a mod, to see if there are issues.
Been using Nexus Mod Manager and LOOT, and my game's instability just comes from me having too many graphical mods that overstep my laptop's RAM capability after a short while.
4228116 I'm sure I'll be revisiting Nexus. From what I've gathered, Skyrim SE won't have Workshop support.
