Why griffons?
Because griffins are awesome! I've been on a real griffon kick lately. Looking at art, stories, etc. I've even got a Gilda story in the works.
Hopefully season 5 will explore the griffins as a people. See their lands and culture. As politeas Gilda was and as.... um... French as Gustav was, there's got to be more to them.
In the mean time, we writers can make up whatever we want, and that's just great for world building. In that vein, here is a story all about who ponies met up with the catbirds. The story is still in the queue for approval but I guess I can let you guys view it early.

When Scootaloo and a new student get into a fight at school, it's up to Rainbow Dash and Twilight Sparkle to teach her the importance of Griffon/Pony relations by reading the story of the first encounter between a Griffon huntress and a Pegasus soldier.
A story about gryphons? Will read.

catbirds are best creatures. Gilda is my personal favorite. I got two stories featuring griffons and it's awesome.

I agree, griffons/griffins need to have a couple of episodes (or at least one!) that define them better than what we've seen thus far. We see them in the Equestria Games, so they have to be at least a semi-prominent species, right?
