I'd give you some basic tips, but I'm a rookie too. Here are some pointers that may be helpful, though. I'll give you some pointers of what *I* think make good fanfiction, and would make me want to read it.
1. Conventions. Make sure you use proper grammar and formatting, or whatever you write will be lost in translation. Little irks me more than a great story concept ruined by heavily flawed execution. Airtight writing is good writing.
2. Concept. Make sure the idea is something that would make a story. Make sure that the world you're trying to create is something that is engaging and interesting. If the premise bores me, I'm not going to read it. Twilight Reads a Boring Book for Seven Hours, and You Read With Her isn't something I'd read. The Mane 6 Strive to Defeat an Ancient Evil however, might be interesting and fun to read. Those are 1 in the morning examples, but you get the idea.
3. Characters. Make the characters interesting, believable, and balanced. Since these are Pony fanfics, that shouldn't be too hard, but make sure you capture the premade characters when you use them. A break in character of an established cast member once is okay. That happens, even within the show. A character breaking character every time they open their mouth, however, is unacceptable. OCs, also, should be used carefully. They shouldn't be Mary Sues (look up the term if you don't know it already) and should be able to realistically exist within the world you're in. In this case, this is Equestria, but I'm trying to be general.
Those are my 3 tips for you, dude. Any other feedback I'd have would either be highly opinionated or entirely speculative, but I hope they were helpful. I'm no expert writer, but hopefully it's a push in the right direction.
