Okay, so I did a fic with a guy called TheLionPaladin, called Rotten Apples. It includes Applejack but focuses mainly on Dr. Stable, who gets drafted into a conflict that Equestria is involved in. Link here ----------> http://www.fimfiction.net/story/64207/rotten-apples
The chapters I wrote include my name with brackets around it (Like this), and the first two chapters are more of a prologue, I think, since they were originally from the story 'Bruised Apples'. You'll probably still want to read them, though.
