So I've completed Journey 6 in Elden Ring, and gotten the Frenzied Flame ending, bringing me up to 85% Achievement completion percentage. I have one more optional boss to beat which will require going into Journey 7, and a whole bunch of legendary loot to find for the last of the achievements.
The final boss took dozens of attempts and my successful attempt brought me down to my very last health flask.
So I believe I'm going to stay in Journey 6 for the time being. Tonight, I decided to go to Ephael and test this "blocking whore" build against the game's most infamous boss.
So here's how that's going:

When I re-watched it, that was completely on me; that grab was clearly telegraphed, and I wasn't quick enough. But goddamn what a completely badass way to die.
Think I'll spend the rest of the evening writing and watching Equestria Girls.
Yeah the grab will get ya. Still, good attempt.
Also I feel like Elden Ring has to be one of the easiest Fromsoft games to Platinum, it was actually fun and didn't want me to take my controller over the knee.
