I somewhat struggle with Applejack‘s accent and am unsure as to how I should tackle it. Are there any tips as to how to do it, and/or would it be better to just leave it out?

This topic is a bit tricky, since some people like to give her a rather heavy accent (with 'I' replaced by 'Ah', for a rather controversial example), though many are against it, as it lowers readability of the text for them way too much. That's why others go for somethin' a tad milder, sugarcube. Truth be told, there's no single right or wrong way of going about this, so stick to whatever is comfortable for you. Just make sure to keep it consistent.

As for tackling it, I'd suggest reading through episode transcripts as well as seeing how other writers tackle AJ in various ways. Seeing it for yourself should help you decide on the best course of action.
