I'm quite fond of the character/scenario builders posted to r/makeyourchoice (among other places). Most of them are just the static image kind - there's an old one for MLP, but fairly simple and lacking content from the later seasons.

Significant characters (to date) in Expedition to the Cloudbreak Islands. Princess Twilight Sparkle does make a cameo in the first chapter, but other than that it's all-OC, at least on the pony side. A handful of dragon characters from Skylanders do make an appearance about 20 chapters in.
